- Omakase Sushi Chef — Shiraz Kitchen, White Plains
- Shiraz Kitchen is reintroducing its sushi bar, and we are looking for the chef who will lead it.
This is a Persian-Mediterranean restaurant with a MICHELIN Bib Gourmand, a Wine Spectator Award of Excellence, and a New York Times Very Good rating. We have spent ten years building a room where hospitality, sourcing, and craft are taken seriously. The sushi program is the next chapter, and we want a chef who treats it as their own. Compensation
- $1,500/week base, with room above for the right experience
- Full-time, stable schedule, long-term role
- What you would own
- The omakase progression and daily sushi menu
- Sourcing, aging, and butchery decisions
- The counter itself: pace, presence, guest experience
- Collaboration with ownership on seasonal direction and menu growth
- Who we are looking for
Proven omakase experience
- Deep knowledge of fish: selection, aging, butchery, knife work
- Disciplined, consistent, calm under service
- Takes pride in every piece that leaves the board
- Wants a long-term home, not a stop
